Influenced by a wealth of French tradition and the exceptional culinary heritage of St. Barth itself, Le Guanahani presents refined, Mediterranean-inspired cuisine with unobtrusive service in two distinct al fresco settings—within the sultry gardens of Bartolomeo or poolside at Indigo with stunning views of the bay.
During the third annual St. Barth Gourmet Festival taking place Nov. 3-6, 2016, eight visiting chefs will present the best in French cuisine at hotels across the island. Fabien Lefebvre, Michelin-starred chef at Octopus in Béziers, will be the featured guest chef at Le Guanahani. Menu
Le Guanahani is the only hotel on the island offering a deep-sea Atlantic fishing excursion in combination with a chef-prepared dinner. Guests head out on a morning fishing trip with an experienced, seventh-generation local fisherman and, when they return to the hotel, the day’s catch is prepared according to their preference—as ceviche, sashimi, tartare, tataki or simply grilled—as part of a three-course tasting menu lunch or a five-course tasting menu dinner.
The hotel’s main restaurant overlooks the pool and the beach of Grand Cul-de-Sac. The all-day dining venue offers a superbly fresh and continually evolving menu with an emphasis on inventive seafood and grilled dishes prepared with subtle global influences. Indigo features a generous continental breakfast for early risers, an extensive full American breakfast buffet throughout the morning, an a la carte lunch daily and dinner on select nights.

Situated between Le Guanahani’s two palm-studded beaches, Indigo on the Beach is the essence of barefoot elegance and the most picturesque spot for toasting the sunset. In this relaxed atmosphere, surrounded by postcard-perfect views of the sea, guests enjoy light fare from Indigo and refreshing hand-crafted cocktails.

Centrally located near Grand Cul-de-Sac and Indigo, The Beach Bar is the place to meet and celebrate the moment with a late-afternoon cocktail or perhaps a bottle of rosé or Champagne as the sun sets for the day. The bar, with its talented mixologists, also provides unobtrusive beachside service to guests relaxing under the shade of the palapas situated along Grand Cul-de-Sac.

A festival of flavors takes place in the evening at Bartolomeo, located in the heart of the hotel’s beautiful tropical gardens. In this elegant candle-lit setting, guests enjoy finely prepared selections made with fresh ingredients and infused with Caribbean spices and Mediterranean flavors. Apéritifs and digestifs are enjoyed at Bar ’to Lounge, the bar adjacent to Bartolomeo, which serves a selection of wines by the glass, liquors and cocktails.
